Thousand Dollar Bars

Tis the Season for fun holiday treats.  Hi Everyone,  I am here with a new recipe for a TWIX like candy bar.

If you have been fallowing along with our blog posts, I told about a library workshop that was called "Oh Fudge". The library runs this workshop every year in November and they give out new recipe ideas.  This is a fun recipe for the holidays.

Thousand Dollar Bars

Shortbread Layer

1 cup (2 sticks) salted butter
at room temperature

1 cup confectioners' sugar

2 teaspoons vanilla extract

2 cups All-purpose Flour

Caramel Layer

2 cups caramel, cut into small chunks

3 Tablespoons heavy cream

Chocolate Layer

3 cups chopped milk chocolate or dark chocolate,, melted

1 Tablespoon Vegetable shortening (optional)

1) FOR THE CRUST:  Preheat your oven to 300 degrees.  Spray a 9"x 13" pan lightly with cooking spray,  or line with parchment and set aside.

2) In a medium-sized bowl, beat together the butter, sugar and vanilla.  Add the flour. At first the mixture may seem dry, but will come together as you continue to beat at medium speed.

3) Take the dough (it will be somewhat stiff) and press it evenly into the pan   Lightly flouring your fingertips this will help with any sticking.

4) Prick the crust all over with a fork.  The holes will allow steam to escape and the crust will bake evenly with fewer bubbles.

5) Bake the crust until it's lightly golden brown on top and the edges are deeper golden brown, about 35 to 45 minutes.  Remove from the oven and immediately run a knife around the edges to loosen the crust.  Set it aside to cool completely.

6) FOR THE CARAMEL LAYER:  Melt the caramel and cream over low heat in a small sauce-pan.  Pour the caramel over the cooled crust and set in the refrigerator for 30 minutes to chill and firm up.

7) FOR THE CHOCOLATE LAYER: Melt the milk or dark chocolate slowly in a double boiler or over very low hear.  If it seems very thick, add a tablespoon of shortening to thin it.  Pour evenly over the chilled caramel layer and spread to cover all of the caramel.  Return to the fridge until the chocolate is well set.  Cut into 2" x 2" squares to serve.  It's best to store these bars in the refrigerator.

8) These bars can also be cut and dipped in milk chocolate to resemble Twix Bars .  After the caramel layer has chilled firm, cut down the length of the pan, splitting the bars into two long, narrow bars.  Then cut each long strip into "fingers".  Dip the chilled bars into melted chocolate and place on parchment paper to set for several hours.

Salted chocolate Caramel Pretzel Bark

I  though I would give one more candy recipe.  This recipe is very easy and good.  It also came from the  "Oh Fudge" at our library. ingredients: 1 cup (2 sticks) of unsalted butter 1 cup Light Brown Sugar 1 Bag of Mini Pretzels 12-oz Bag of Semi-Sweet Chocolate Chips Sea Salt  Preparation: 1.  Wrap a baking sheet with aluminum foil. 2.  Melt the butter in a saucepan over medium heat.  As it melts cover the baking sheet in a even layer of mini pretzels. ( You may not use the entire bag.) 3. Once t he butter is melted, add the sugar and stir to incorporate.  Allow the sugar and butter to softly simmer and bubble, but don;t let it boil. so adjust the heat accordingly.  Stir occasionally.  The browning process's should take about three minutes from when it starts to bubble. 4. Once the sugar and butter have caramelized  pour the mixture evenly over the pretzels on ...

Book review

I would like to say a word about a inspiring book that I read a while back.   The name of the book is Hitchhikers by Bernard Poduska The true story of one man's amazing journey from a homeless and hopeless childhood to a life of conversion and faith . The story starts in the spring of 1948 when Bernard Poduska and his family was evicted from their home in Albuquerque, New Mexico. Bernard was eight year old at the time, it tells of his family hitchhiking across the country trying to find a place to call home.  It tell of the hard times, and the suffering they went through.  It also tell of how Bernard, being an atheist, finds God.  This is a quote from the book.  " you will never know what's on down the road until you've made the journey; be grateful for any rides others may give you along the way, and whatever your destination, the journey is everything-- make the most of it." I enjoyed this book, it is very different than the run-of-the-mill books.  ...
